Chicken Adobo

INGREDIENTS:
6 Pieces of Chicken
Soy Sauce
Black Peppercorns
Coconut Milk
Sugar
Salt & Pepper
White Rice
Rice Wine Vinegar
Coconut Cream
2 Garlic Cloves
1 Onion
2-3 Bay Leaves
Curry Powder
Oil
How To Make:
- Break down the chicken.
- Add 1 tbsp of oil to a deep pan on medium-high heat.
- Add chicken to the pan.
- Add 2 tbsp of salt and pepper.
- Allow chicken to brown.
- Flip chicken and season with salt and pepper.
- Chop the onion into quarter-inch pieces.
- Peel and cut 2 garlic cloves.
- Add onions and garlic to the chicken.
- Add 2 tbsp sugar.
- Add 2 tsp of black peppercorns.
- Add 2 tsp of curry powder.
- Add 1 ½ cups of Rice Wine Vinegar.
- Add 1 cup of Soy Sauce.
- Pour water to the top of the chicken.
- Stir in all ingredients and mix.
- Add bay leaves.
- Allow the recipe to cook for 10-15 minutes covered.
- Then, cook for 10 minutes uncovered to allow the sauce to thicken.
- Add ½ cup of coconut cream/coconut milk.
- Plate chicken and serve with rice.
- Ladle some sauce from the pan onto the chicken and rice.
