Pancit

Description:

Fr. Leo explores his birthplace on the island of Masbate in the Philippines. He prepares a celebratory pancit dish for his homecoming.

INGREDIENTS:

Bihon Noodles 

Chinese Sausage 

¼ cup Carrots 

2-3 tbsp Onion 

¼ cup Celery 

1-2 Garlic Cloves 

1 cup Cabbage 

Oyster sauce 

Soy Sauce 

Chicken Broth / Boullion 

Calamansi 

 

How To Make:

  1. Prepare noodles. 
  2. ¼ cup carrots (matchstick cut) 
  3. ¼ cup thinly sliced celery 
  4. 2-3 tbsp thinly cut onion 
  5. Mince 2 garlic cloves. 
  6. ¼ cup chicken (about ½ chicken) cut into strips. 
  7. 1-2 Chinese sausages; thinly sliced. 
  8. 1 cup Cabbage; thinly shredded. 
  9. Add oil to the pan.  (1 tbsp) 
  10. Add chicken to the pan and season with a pinch of salt and pepper. 
  11. Allow chicken to brown. Once the chicken is ¾ cooked, add in the Chinese sausage. 
  12. Combine all vegetables into a pan and sauté. 
  13. Add ½ teaspoon of salt and ½ teaspoon of pepper. 
  14. In a separate bowl, mix the following sauce mixture: 
    1. ¾ cup Chicken Broth 
    2. 2 tbsp Oyster Sauce 
    3. 2-3 teaspoons Soy Sauce 
  15. Mix half of the sauce mixture into a frying pan. 
  16. Add noodles to the frying pan. 
  17. Add the other half of the sauce mixture into the frying pan and mix. 
  18. Remove and plate. 
  19. Garnish with celery leaves. 
  20. Add a squeeze of calamansi.
