Croque Madame

Cook Time: 20 minutes

 

INGREDIENTS:

2 slices of white bread, crust removed

2 slices of cooked ham

2 slices of cheese (variety of your choice, but one that melts nicely)

1 egg

4 Tbsp Butter, divided

2 Tbsp All-Purpose Flour

1 ½ cups of milk

1 tsp salt

1 tsp white pepper

1 tsp nutmeg 

 

How To Make:

  1. Preheat oven to 375 degrees
  2. Prepare the bechamel sauce by melting 2 Tbsp of butter in a small pot. Add the flour and whisk together until it becomes a paste. Whisk constantly while slowly adding all of the milk. Season with salt, pepper, and nutmeg and whisk over medium heat until it becomes a thick sauce.
  3. Prepare the sandwich by removing the crust and layering the ham and cheese.
  4. Heat up butter in an oven-safe pan over medium heat.
  5. Add the sandwich and toast for 1-2 minutes on each side.
  6. Ladle or pour the bechamel over the sandwich and make an indention in the center of the sandwich - big enough to hold the egg yolk.
  7. Carefully crack the egg on top of the sandwich and put it in the oven for 3-5 minutes, or until the egg whites are cooked.

 

INGREDIENTS FOR DIJON VINAIGRETTE:

1 Tbsp Dijon Mustard

2 Tbsp Red Wine Vinegar

¼ cup Olive Oil

1-2 pinches of salt and pepper

 

How To Make:

  1. In a bowl, whisk together the mustard, vinegar, salt, and pepper.
  2. Slowly drizzle the olive oil, whisking constantly. This will create an emulsion.
  3. Toss field greens with the vinaigrette.
