Grilled Stir Fry with Tofu

Ingredients:
1 pound firm tofu
2 tablespoons peanut oil
1 cup Italian season bread crumbs
1 teaspoon salt
1 teaspoon pepper
1/2 cup snow peas
1/2 cup carrots, sliced
1/2 cup baby corn
1/2 cup mushrooms, sliced
1 clove garlic, minced
2 teaspoons oyster sauce
1 teaspoon soy sauce
1 teaspoon ketchup

Slice tofu into 1/2 inch pieces, season with 1/2 teaspoon of salt and pepper. Dredge in breadcrumbs. Heat peanut oil in pan. Cook tofu 1-2 minutes on each side until golden brown. Remove and set aside. In the same pan, sauté the garlic. Add vegetables and sauté for 1-2 minutes. Add the oyster sauce, soy sauce and ketchup to the pan, heating until they begin to simmer. To plate, scoop vegetables on the plate and top off with pieces of the crunchy tofu.
