International Paella

Description:
This international paella is inspired by the global cuisine found in Montreal. Delicious flavors from around the world are combined to create this tasty comfort food.
Serves: 4 People
Cook Time: 30 minutes
INGREDIENTS:
2 cups of Jasmine Rice
1 Chicken Breast, sliced into thin medallions
6-8 Shrimp
2 links of Chorizo, sliced into ⅛ inch rounds
2 Garlic Cloves, minced
2 Shallots, minced
2 quarts of Broth, plus extra if needed
2 Tbsp Olive Oil
2 tsp Salt
2 tsp Black Pepper
1 tsp Saffron
2 cups of Coconut Milk
2 Tbsp White Wine
2 Tbsp Parsley, minced
How To Make:
- Heat the olive oil in a paella pan or large sauté pan. Add the chicken and season with salt and pepper. Add the chorizo and cook together until the chicken is almost cooked through. Remove and set aside.
- Add the shallots, garlic, and rice to the pan and toast for a few minutes. Add the white wine and cook for 1-2 minutes.
- Return the chicken and chorizo to the pan and mix together.
- Add the saffron, along with 1½ cups of broth and mix together.
- Add the coconut milk and mix together.
- Place the shrimp into the rice and reduce the heat to medium-low temperature, cooking for 20 minutes uncovered.
- Add more chicken broth, a little at a time, until the rice is fully cooked.
- Sprinkle with parsley to garnish.
