Mushroom Gratin Soup

Description:
Celebrate the healing waters of Lourdes with this unique cheesy soup, inspired by ingredients found in Southwest France.

INGREDIENTS:
1 Tbsp Butter
½ Onion, sliced thinly
2 cups of Portobello & Button Mushrooms, sliced thinly
1 clove of Garlic, minced
2 Tbsp White Wine
2 cups of Beef Broth
8 slices of Baguette Bread
2 -3 slices of Provolone Cheese
Fresh Thyme to garnish
How To Make:
- Preheat the oven to 350 degrees.
- In a saucepan, melt the butter over medium heat.
- Add the onions, garlic, and mushrooms. Sauté until the onions are translucent and the mushrooms begin to caramelize.
- Add wine and cook for 2 minutes.
- Add beef broth and stir ingredients together.
- Divide the soup into two separate oven-safe bowls.
- Place baguette slices on top of the soup.
- Place the cheese over the bread.
- Put the soup bowl on a baking dish and place it in the oven for 5 -8 minutes.
- Garnish with fresh thyme.
