Salmon Burger

Ingredients:
4 cans pink salmon, drained
2 eggs
2 tablespoons chopped fresh dill
1 cup panko bread crumbs
2 tablespoons Creole mustard
Salt and pepper to taste
Olive oil for pan searing

Combine salmon, eggs, breadcrumbs, mustard, salt and pepper in a large mixing bowl. Mix by hand until all ingredients are well incorporated. Form into patties about 1 inch thick. Heat oil in a heavy skillet over medium-high heat. Cook patties in the oil 2-3 minutes each side until browned. Serve on a bun topped with aioli sauce.
