Seafood Chowder

Description:

The fruits of the sea can add hearty flavors to our favorite recipes. This delicious stand-alone meal was inspired by Fr. Leo’s visit to Quebec, Canada.

Serves: 2 People

Cook Time: 25 minutes

 

INGREDIENTS:

1 medium-sized Russet Potato, peeled and cubed

1 Tbsp butter

¼ lb Cod, cubed

¼ lb Salmon

1 Tbsp White Wine

1 clove Garlic, minced

1 Lemon, zested

1 cup of Heavy Whipping Cream

1 Tbsp Fresh Herbs, such as Parsley or Dill

2 cups of Seafood Broth

Baguette Bread, sliced

 

How To Make:

  1. Melt the butter in a saucepan.  Add the garlic and lemon zest.  Add the whitewine and broth. Bring to a light boil.
  2. Add the potatoes. Cook for 5-7 minutes or until tender.
  3. Add the cream and bring to a simmer.
  4. Add the fish and cook for about 3-5 minutes.
  5. Garnish with fresh herbs.
  6. Serve with baguette slices.
