Sinigang

Description:

Father Leo explores Manila’s rich Catholic heritage. He tours a lively seafood market and prepares a Grilled Shrimp Sinigang, inspired by Filipino patron saints.

INGREDIENTS:

White Rice

Kamote Leaves

Kangkong  (Water Spinach)

Oil

Green Chiles

Calamansi (optional)

Okra

Radishes

String Beans

Fish Sauce

Tomatoes 

4-6 large Shrimp / Prawns 

Knorr Sinigang Packet 

Onions 

Zucchini 

Salt and Pepper

 

How To Make:

  1. Peel shrimp. Keep the shells and place the shrimp into a bowl. 
  2. Mix 1 cup of water with the shrimp shells (in another container) and save for later. 
  3. In the bowl with the peeled shrimp, mix 1 tablespoon of oil. 
  4. Season the shrimp with salt and pepper. 
  5. Grill shrimp until fully cooked and place in a clean bowl. 
  6. Add 1 tsp of oil to a pot on med-high heat. 
  7. Sauté tomatoes and onions in the pot. 
  8. Cut (oblique slices) okra and radishes. 
  9. Add okra and radishes to the pot as the tomatoes soften. 
  10. Cut (oblique slices) zucchini and add to the pot. 
  11. Cut string beans (2-3 inches) and add to the pot. 
  12. Add shrimp shell water to the pot and stir gently. 
  13. Add Sinigang Mix to the pot and continue to stir gently. 
  14. Cover the pot of vegetables and allow it to cook. 
  15. After cooking, add in the fish sauce. 
  16. Add in the chiles, Kamote leaves, and Kangkong leaves. 
  17. Allow to cook for another minute or two. 
  18. Transfer to a bowl and serve with rice. 
  19. Optionally, top with calamansi juice.
