INGREDIENTS:
White Rice
Kamote Leaves
Kangkong (Water Spinach)
Oil
Green Chiles
Calamansi (optional)
Okra
Radishes
String Beans
Fish Sauce
Tomatoes
4-6 large Shrimp / Prawns
Knorr Sinigang Packet
Onions
Zucchini
Salt and Pepper
How To Make:
- Peel shrimp. Keep the shells and place the shrimp into a bowl.
- Mix 1 cup of water with the shrimp shells (in another container) and save for later.
- In the bowl with the peeled shrimp, mix 1 tablespoon of oil.
- Season the shrimp with salt and pepper.
- Grill shrimp until fully cooked and place in a clean bowl.
- Add 1 tsp of oil to a pot on med-high heat.
- Sauté tomatoes and onions in the pot.
- Cut (oblique slices) okra and radishes.
- Add okra and radishes to the pot as the tomatoes soften.
- Cut (oblique slices) zucchini and add to the pot.
- Cut string beans (2-3 inches) and add to the pot.
- Add shrimp shell water to the pot and stir gently.
- Add Sinigang Mix to the pot and continue to stir gently.
- Cover the pot of vegetables and allow it to cook.
- After cooking, add in the fish sauce.
- Add in the chiles, Kamote leaves, and Kangkong leaves.
- Allow to cook for another minute or two.
- Transfer to a bowl and serve with rice.
- Optionally, top with calamansi juice.
