Turkey Roulade
Description: This dish is a turkey dinner in a roll. You can mix and match your favorite Thanksgiving items into this dish.

Ingredients:
1 Turkey Breast (Skinless) or Turkey cutlets
1 Turkey Filling Recipe
½ lb Thin Cut Bacon
½ tsp Thyme, Fresh (minced)
½ tsp Oregano, Fresh (minced)
¼ tsp Rosemary, Fresh (minced)
½ Tbs Kosher Salt
¼ tsp Black Pepper
¼ cup Unsalted Butter
1 Whole Egg
½ cup Onion Chopped
½ cup Celery Leaves
1 Garlic (minced)
¾ tsp Dried Italian Herbs
1 tsp Celery Seeds
½ cup Bread Crumbs
½ tsp Kosher Salt
1.4 tsp Black Pepper
1 lb Med Italian Sausage
Directions:
- Chop your herbs, dice your onion and celery and mince your garlic.
- In a large pan, melt the butter and sauté the vegetables until translucent. Then add the Italian sausage and brown until almost done (the sausage will be finished in the roulade.
- Transfer the sausage mix into a med bowl and hold. Add in the egg and bread crumb to make a paste like mix.
- Layer a cutting board with the thin cut bacon and add the pounded turkey. Season with fresh herbs and add in the filling mix and spread evenly. Roll the roulade
- Place the roulade in a hot pan and sear with the seam side down to lock in the bacon wrap. Sear on all sides to brown nicely. Then transfer the roulade to a pan lined with foil and a rack.
- Bake at 375 for 15-18 mins.
- Remove the turkey from the oven to rest on the pan.
- Slice the roulade on a bias and plate over some tomato sauce and sprinkle with fresh herbs.
