Arroz Caldo (Serves 2)

1 chicken breast
2 teaspoons vegetable oil
1 teaspoon salt
1 teaspoon pepper
2 teaspoons fresh ginger minced
1 clove garlic
1 shallot, minced
2 cups jasmine rice
1 quart chicken stock
1 tsp fresh chives, minced

Heat oil in a sauce pan.  Cut chicken into cubes and season with salt and pepper.  Brown in the hot oil for 2-3 minutes, until the chicken takes on some color.  Add fresh ginger, garlic, shallots and sauté.  Add rice and stir until the rice begins to take on some color.  Add chicken stock and cook until rice thickens and becomes soft.  Add fresh chopped chives or scallions for color and fresh flavor.
