Baked Fried Chicken

6-8 boneless chicken thighs
2 cups buttermilk
2 tablespoons hot sauce
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons garlic powder
1 teaspoon paprika
2 cups Italian seasoned breadcrumbs
Non-stick cooking spray




Preheat oven to 375oF. In a large bowl, whisk together the buttermilk, hot sauce, salt, pepper, garlic powder and paprika. Submerge the chicken thighs in the buttermilk mixture and marinade for at least 1 hour. Prepare a baking pan with a baking rack. Put the seasoned breadcrumbs on a large plate or shallow bowl. Dredge the chicken in the breadcrumbs, coating both sides. Shake off excess crumbs and place on the baking rack. Spray the tops of the chicken with non-stick cooking spray. Bake for 20-25 minutes or until internal temperature is 165oF. Remove from oven and rest, uncovered, for about 2-3 minutes before serving.
