Banana and Cognac Infused Maple Syrup

2 cups maple syrup
1-2 bananas, sliced
2 tablespoons butter
2 teaspoons fresh mint leaves, finely minced
Zest of 1 orange
Juice of ½ an orange
½ cup cognac (optional)


Melt butter in a sauté pan. Add sliced bananas, orange zest, orange juice and mint leaves and sauté. Add cognac and flambé until flame dies down. Add syrup and reduce heat to low. Allow the syrup to warm, and serve by pouring over the French toast, pancakes, or other baked desserts.
