Salmon En Papillote

Ingredients:
4 18x15 Parchment Paper
1 Side of Salmon, skin removed (4 x 6oz pieces)
2 cup Sliced Sweet Onions
2 cup Shredded Carrots
1 Garlic Clove (minced)
16 Asparagus (trimmed to 5 inches)
to taste Salt and Pepper
½ cup Grapeseed oil
4 Lemons
2 Tbs Butter
Directions:
- Preheat oven to 450 degrees
- Mix together Onions and Carrots and garlic in a bowl with olive oil, season with Salt and Pepper and divide evenly between the 4 pieces of parchment paper.
- Season Asparagus with oil Salt and pepper and lay on top of carrots and onions to form a bed.
- Place Salmon on top of the bed of vegetables, place ½ TBS butter on Salmon, Season with Salt and Pepper and top with 1/2in thick lemon slice.
- Fold the other half of parchment over the fish and starting from one end begin crimping and folding the paper right before you seal add in a little extra liquid to keep the fish moist and then seal tightly.
- Place on a sheet pan and bake for 8 to 10 minutes
- Remove from oven top with green onions and serve
