Cous Cous with Zucchini & Onions (serves 3-4)

2 cups chicken broth
¼ cup onion, finely minced
1 zucchini, cubed (approximately 1 cup)
1 teaspoon garlic, minced
1 cup couscous
1 teaspoon olive oil
Zest of one lemon
Salt and pepper to taste



 Bring broth to a boil in a sauce pan. Add couscous, olive oil, onions, zucchini, lemon zest, and salt and pepper.
Stir together and stir until the liquid is almost cooked out and couscous becomes soft. Season with salt and pepper to taste.
