Fr. Leo's Big City Steak

2 (6 ounce) filet mignon steaks
1 tablespoon salt
1 tablespoon pepper
¼ cup of olive oil
1 tablespoon butter




Set oven to broil.  Heat butter and olive oil in oven safe pan. Pat the steaks dry with paper towel and season with salt and pepper on both sides. When oil is hot, sear steaks in oil for 2 minutes on each side. Place pan in oven (middle rack) and broil for 4-5 minutes. Carefully remove from oven and continue to baste the steaks with the hot oil for another minute. Remove from oil, pat dry with paper towel and rest 5 minutes before serving.
