Garlic Fried Rice (Serves 3-4)

1 large carton Leftover Chinese white rice
1 teaspoon vegetable oil
1 scallion, minced
1 teaspoon garlic
2 teaspoons salt
1 teaspoon pepper
1 tablespoon soy sauce
1 teaspoon shrimp paste (if available)
1 tablespoon water

Heat oil in a non stick pan over medium heat. Sauté scallions. And ½ of the garlic, salt, pepper, soy sauce and shrimp paste to the pan to flavor the oil. Add the rice, breaking it up with your hands. Add 1 Tablespoon of water and allow the rice to reheat, stirring occasionally. Add the rest of the salt, pepper, garlic, soy sauce and shrimp paste directly on top of the rice stirring well. Cook until rice is soft and warm. Remove and serve with another topping of freshly minced scallions.
