Ground Buffalo Kapama

Ingredients:
2 pounds ground buffalo
¼ cup olive oil
1 onion diced
3 cloves garlic, chopped
Salt and pepper to taste
1 tablespoon oregano
1 teaspoon ground cinnamon
1 whole cinnamon stick
½ teaspoon nutmeg
1 6-oz can tomato paste
1 15-oz can diced tomatoes
1 15-oz can tomato sauce
1 bay leaf

Add olive oil to pan, heat over medium heat. Add onion to pan and sweat down until translucent. Add garlic and stir. Add buffalo and slowly brown. Season with salt and pepper, continuing to brown the buffalo. Add the oregano, cinnamon and nutmeg and stir together. Add the tomato sauce, chopped tomatoes and tomato paste and stir thoroughly. Add 1 bay leaf, broken in half, and the cinnamon stick. Simmer about 30 minutes until done. Remove the bay leaf and cinnamon stick before serving.
