Lemon Merinque Pie

½     Cup Cornstarch

1 ¼  Cup Sugar

 ¼    TSP Salt

2      Cup Boiling Water

3      Ea    Egg Yolks (well Beaten)

1 ½  TSP Grated Lemon Rind

½     Cup Lemon Juice

2      TBS Butter

1      Ea    Pie crust recipe

3      Ea    Egg Whites

6      TBS Sugar


How To Make:

  1. Mix cornstarch, Sugar and Salt In Sauce Pan, slowly stir in water and cook 15 minutes until thick
  2. Whip egg yolks until light and add to mixture along with lemon rind and lemon juice and cook 2 minutes constantly stirring
  3. Add butter and cool slightly then pour into pastry shell.
  4. Beat egg whites until foamy then gradually add in sugar.
  5. Continue beating until mixture stands with stiff peaks
  6. Spread on top of filling to the edge
  7. Bake in 350 degree oven for 15 minutes and cool
