Lemon Merinque Pie

Ingredients:
½ Cup Cornstarch
1 ¼ Cup Sugar
¼ TSP Salt
2 Cup Boiling Water
3 Ea Egg Yolks (well Beaten)
1 ½ TSP Grated Lemon Rind
½ Cup Lemon Juice
2 TBS Butter
1 Ea Pie crust recipe
3 Ea Egg Whites
6 TBS Sugar
How To Make:
- Mix cornstarch, Sugar and Salt In Sauce Pan, slowly stir in water and cook 15 minutes until thick
- Whip egg yolks until light and add to mixture along with lemon rind and lemon juice and cook 2 minutes constantly stirring
- Add butter and cool slightly then pour into pastry shell.
- Beat egg whites until foamy then gradually add in sugar.
- Continue beating until mixture stands with stiff peaks
- Spread on top of filling to the edge
- Bake in 350 degree oven for 15 minutes and cool
