Parmesan Herb Crusted Lamb Chops with Mint Sauce

Mint Sauce
 

Description: 

This sauce doubles as great marinade for lamb and as a finishing sauce.

Ingredient:

2 Tsp Ginger, minced

¼ Cup Cilantro, packed

1 Tbsp Honey

¼ Cup Rice Wine Vinegar

½ Cup Vegetable Oil

Tt Kosher Salt

Tt Black Pepper

                                             

Directions:

  1. Place all items in a food processor and process until slightly coarse.
  2. Taste and adjust for seasoning.

 

Parmesan Herb Crusted Lamb Chops


Description: This dish is a traditional rack of lamb recipe with a parmesan twist

Cooking Time: 30 mins

 

Ingredients:

2 Rack of Lamb, Frenched

2 Oz Olive Oil

Tt Kosher Salt

Tt Black Pepper

 

Ingredients – Marinade:

2 tsp garlic, minced

1 tbs ginger, grated

3 tbs honey

2 tbs lemon juice

2 tbs olive oil

2-3 tbs fresh mint leaves, minced


Ingredients - Herb Crust

2 Cups Panko or other bread crumbs

½  Cup Parmesan, grated

1 Bunch Parsley

1 Bunch Thyme

1 Sprig Rosemary

 

Directions:

  1. Combine ingredients for the marinade and allow the rack of lamb to marinade on both sides
  2. Combine the ingredients for the herb crust, and press the rack of lamb onto the crusting on both sides
  3. Put rack of lamb on a baking sheet with a baking rack and cook for 20-25 minutes or until the internal temperature reaches 125F
  4. Use the rest of the marinade to make a sauce by adding to a sauce pan and heating until it lightly boils
  5. When lamb is cooked, pull the lamb out and rest, tent with foil so that the lamb stays warm while resting, apx 10 minutes before slicing
  6. Slice into chops and serve with mint sauce.
