This sauce doubles as great marinade for lamb and as a finishing sauce.

Ingredient:
2 Tsp Ginger, minced
¼ Cup Cilantro, packed
1 Tbsp Honey
¼ Cup Rice Wine Vinegar
½ Cup Vegetable Oil
Tt Kosher Salt
Tt Black Pepper
Directions:
- Place all items in a food processor and process until slightly coarse.
- Taste and adjust for seasoning.
Parmesan Herb Crusted Lamb Chops

Ingredients:
2 Rack of Lamb, Frenched
2 Oz Olive Oil
Tt Kosher Salt
Tt Black Pepper
Ingredients – Marinade:
2 tsp garlic, minced
1 tbs ginger, grated
3 tbs honey
2 tbs lemon juice
2 tbs olive oil
2-3 tbs fresh mint leaves, minced
Ingredients - Herb Crust:
2 Cups Panko or other bread crumbs
½ Cup Parmesan, grated
1 Bunch Parsley
1 Bunch Thyme
1 Sprig Rosemary
Directions:
- Combine ingredients for the marinade and allow the rack of lamb to marinade on both sides
- Combine the ingredients for the herb crust, and press the rack of lamb onto the crusting on both sides
- Put rack of lamb on a baking sheet with a baking rack and cook for 20-25 minutes or until the internal temperature reaches 125F
- Use the rest of the marinade to make a sauce by adding to a sauce pan and heating until it lightly boils
- When lamb is cooked, pull the lamb out and rest, tent with foil so that the lamb stays warm while resting, apx 10 minutes before slicing
- Slice into chops and serve with mint sauce.
