Quiche Lorraine

Description: 

This dish is great for breakfast or for a nice early afternoon brunch.

Ingredients:

1 Ea Frozen Pie Crust

8 Oz Bacon

¼ Cup Yellow onion, small diced

5 Ea Eggs, large

1 ¼ Cups Half and Half

¼ Tsp Nutmeg

¼ Tsp White pepper

¼ Tsp Kosher salt

1 ¼ Cups Gruyere Cheese

1 ½ Tbsp Green onions, sliced thin

 

How To Make:

  1. Pre-heat your oven to 350 F.
  2. Blind bake your pie dough in the pie pan. Line and fill ~2/3s the inside of the pie dough with beans to keep your dough from raising.
  3. Bake your crust for ~20 mins and then remove the beans. Using a fork poke the dough and then return to the oven for another 5-8 mins.
  4. While the crust is baking either line a sheet pan with parchment and bake your bacon until it almost crisp. Or cut up the bacon into small squares and pan cook it cooking until almost crispy. Reserve at least 2 tsp of the bacon fat and hold the back for later.
  5. Add in the onions and sauté until translucent and reserve with the bacon. 
  6. In a med bowl mix together the eggs, half and half, nutmeg, white pepper and salt. Mix in 1cup of the grated cheese.
  7. In the pie down add in the bacon and onions, and pour in the egg mix. 
  8. Sprinkle the remaining cheese on the top and bake for 30-35 mins at 350F. The top should be golden brown and slightly jiggly in the middle. Cool slightly and serve or chill and serve later.
