Skewered Mediterranean Shrimp

12 large shrimp, peeled and deveined with tails on
1 clove fresh garlic, minced
1 tablespoon rosemary, finely minced
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
Juice from 1 lemon
2 six inch skewers




Prepare shrimp by removing shells and deveining, but keeping the tails intact. Prepare two skewers, each with 6 pieces of shrimp, tightly packed together on the skewer. In a bowl, combine garlic, lemon juice, rosemary, olive oil, salt and pepper. Whisk together. Pour over the shrimp and marinate for 15 -20 minutes. Apply non-stick spray to a skillet over medium heat. Cook shrimp skewers for 2-3 minutes on each side, or until the tails turn a bright orange pink color.
