Spaghetti Della Casa (Serves 2)

¼ lb. pasta, cooked according to package directions
½ lb. pancetta or thick cut bacon (cubed)
½ cup white wine (pinot grigio or other dry white wine)
1 cup heavy whipping cream
½ cup peas
½ cup mushrooms
¼ cup onions
Salt and pepper to taste
1-2 tablespoons parmesan cheese
1-2 tablespoons fresh parsley, finely minced




Sauté the bacon until crisp. Spoon out the grease and discard. Add the onions and garlic and sauté for a few minutes. Deglaze the pan by adding white wine, stir and cook for 1-2 minutes. Add the heavy whipping cream and bring to a light boil. Add peas and mushrooms and cook until sauce becomes thicker. Add the pasta to the sauce and cook together 2-3 minutes until pasta is fully cooked and warmed through. Serve with a garnish of parsley and parmesan cheese.
