Tiramisu with Vanilla Wafers

24 vanilla wafer cookies
1 cup espresso coffee
¼ cup sweetened condensed milk
1 container (8 oz.) mascarpone cheese
(or one package (8 oz.) softened cream cheese)
1 quart heavy whipping cream, whipped
2 tablespoons cocoa powder
Mint leaves for garnish



Combine mascarpone cheese, whipped cream and condensed milk together and set aside. Prepare to assemble the individual tiramisu cups by placing a small dollop of the cream mixture at the bottom of a martini glass. Dunk a vanilla wafer into the coffee and place it on the cream. Cover the cookie with a layer of the cheese mixture, and top that with more coffee dunked cookies. Continue the layering process 4 levels high. Dust with cocoa powder and top with a fresh mint leaf for garnish.
